Fried Mashed Potato Balls

Are you ready for the best potato dish we have ever made? I certainly didn’t think that they would turn out this delicious, but they definitely did!

I love potatoes, I mean, I really do… They are my favorite food, I was a vegetarian for roughly three years, and I basically just ate potatoes. My dad used to call me a potato-arian, and it definitely fit!

I mean, look at these! How can you not want to just eat them right through your screen?!

I think that when the Hubby and I make them again we will add some cheese to the middle of the balls to give them a little bit of extra flavor! (Maybe we will even add some bacon, take them up another notch!)

Ingredients
  • 2 cups leftover mashed potatoes cold
  • 1 egg beaten
  • 1 cup Italian breadcrumbs
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1 egg beaten with 1 tbsp water
  • Oil for frying
Servings: balls
Units:
Instructions
  1. Mix your cold mashed potatoes with your garlic salt, pepper and one beaten egg
  2. Roll into ping-pong sized balls
  3. Place onto a cookie sheet and keep in the fridge until ready to fry
  4. Heat your oil to 425 degrees
  5. When ready to fry pull your mashed potatoes back out of the fridge and drop them one at a time into first the egg and water mixture and then into the breadcrumbs
  6. Fry each one until golden brown, 3-4 minutes
  7. Serve with your favorite dipping sauce and enjoy!

When the Hubby was making this State Fair Funnel Cake for  me he kept on calling it a fritter… Which was funny, but not true. This delicious funnel cake deserves to be called by it’s proper name! We all know that funnel cake is a staple at any fair, state or county, and this recipe captures the delicious fried goodness that is funnel cake.
Now I know what you are thinking, and it’s true, this State Fair Funnel Cake really isn’t good for you.. However as a once in awhile treat I think it’s worth it, you can’t deny yourself everything! Diet or not,  health nut or not, sometimes the only thing you want is something warm and sugary!
The hubby and I make a lot of desserts, we don’t eat most of them, mostly because we always end up making too much, but also because neither of us are dessert addicts, we tend to be more potato/bread addicts than anything else, but we did eat this when we made it and it was delicious! So go ahead, treat yo’ self, because you never know when you are going to make it to a State or County fair, but you can now make that magic happen at home!

Ingredients
  • 2 large Eggs
  • 1 cup Milk
  • 1 cup Water
  • 1/2 tsp Vanilla extract
  • 3 cup All-purpose flour
  • 1/4 cup granulated sugar
  • 3 tsp baking powder
  • 1/4 tsp Salt
  • Oil for deep-fat frying
  • Powdered sugar for serving

Instructions
  1. Heat oil to 375°F in a deep-fat fryer or larger heavy bottomed skillet.
  2. In a large bowl, beat eggs.
  3. Add milk, water and vanilla until well blended. Add the flour, sugar, baking powder and salt; whisk until smooth.
  4. Cover the bottom of a funnel spout with your finger and carefully ladle ½-cup batter into the funnel.
  5. Hold the funnel several inches above the oil and release your finger, moving the funnel in a spiral motion until all of the batter has come out of the funnel.
  6. Scrape with a rubber spatula if necessary.
  7. Fry 3-5 minutes on each side or until golden brown, using tongs to flip once.
  8. Drain on paper towels. Dust with powdered sugar; serve warm.
  9. Repeat step 3 and 4 with remaining batter.

Ingredients
  • 2 cup buttermilk
  • 2 large Eggs
  • 1 tsp Paprika
  • 1 tsp hot sauce
  • Salt and pepper to taste
  • 2 tsp baking powder
  • 1 1/2 tsp Baking soda
  • Flour for coating chicken
  • 1 lb of chicken wings or chicken breast
  • Vegetable oil for frying

  1. Wash your chicken and dry it with paper towels. In a bowl mix the liquid ingredients and spices, so the buttermilk, eggs, paprika, hot sauce, salt and pepper and mix really well. In another bowl, combine the baking powder and baking soda, and then whisk into the buttermilk until it becomes foamy.
  2. In a shallow dish put about 2 cups of flour alongside the buttermilk mixture.
  3. First dredge the chicken in the flour on all sides, then dip into the buttermilk mixture and make sure it's coated well all around. Dredge the chicken in flour one more time, then place the chicken on a plate, and repeat with all chicken pieces. So it's easy, flour, buttermilk, flour. If your flour gets too dirty just throw it out and start with some fresh flour.
  4. In a frying pan, heat it lots of oil, at least an inch. Make sure the oil is hot enough. Do not put too many pieces at once, leave enough room in between the chicken, because you don't want them to stick together. Also if you put too much chicken, the chicken might not cook all the way through. The first side will take longer to cook maybe about 7 min, and the second side will cook faster, 3 to 5 minutes, so be patient and let the chicken cook properly. Repeat with remaining chicken.
  5. After the chicken is fried, place them on paper towels to soak up some of the oil and sprinkle some salt over it.

You won’t regret making these delicious and easy Homemade French Fries, they go well with any meal and who doesn’t love french fries?! These homemade french fries are much better for you than any fast food fries! The hubby and I make these every couple of weeks to go along with our chicken strips and usually some delicious cole slaw! (We will be posting those recipes very soon!)
Anyway, I am a huge fan of potatoes, as I’m sure you know if you have read any number of our posts! French fries are one of my favorite ways to eat potatoes! And we make them often!

  1. Heat your oil to 350 degrees in a pan or deep fryer
  2. Slice your potatoes lengthwise about 1/4" thick
  3. Cut each round into slices so you end up with long strips
  4. Fry a couple of handfuls at a time and set them aside
  5. Continue until all fries have gone through once
  6. NOW the fun part, fry them each a second time and set them aside
  7. When they have all been refried you can put them on a serving dish or platter you can season them with whatever you like!
  8. Enjoy!

I know what you’re thinking, and yes we do fry a lot of vegetables. We bought a bunch of Asparagus at the store about a week before we made this Beer Battered Asparagus and right after we bought them we forgot about them, we do that a lot with veggies! But when I realized they were on the edge of being inedible I decided that we needed to cook them right then.
Story time! Not long after we started dating the Hubby and I made our first appliance purchase, a deep fryer. I got shingles our first summer together and I was out of work for over a month, and my father-in-law has a wonderful garden and one of the things he had way too many of was Zucchinis, and so we started making fried zucchini like nobody’s business. We had it almost every day, and that’s why we bought our fryer (that story was a lot more involved than I thought!) Anyway, we have a deep fryer and the Hubby is always looking for new things to fry just to see what happens (he once fried a piece of uncooked spaghetti, and don’t ask, I still don’t know why!) my husband’s love for fried food equals mine perfectly and that’s why you are about to read a recipe for this to die for Beer Battered Asparagus!

  3. In a heavy frying pan, heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. (you can also deep fry, 350 degrees! Just don't use the basket they will stick!)
  4. When oil is hot, dip Asparagus in batter and fry, turning once to brown evenly on both sides.
  5. Drain on paper towels.
  6. We sprinkled some extra pepper on top, yum!
  7. Enjoy!

Yum! I didn’t think I would ever find the time or energy to make my own onion rings, but thanks to the Hubby I don’t have to use a fryer and that’s why I get to eat these Beer Battered Onion Rings anytime I want! They are so easy to prepare and they are absolutely delicious!
We made these Beer Battered Onion Rings on a beautiful Saturday afternoon, and I ate them for lunch at work the next week until they were gone! We had never made onion rings before, so we didn’t realize exactly how many rings you get out of an onion, be prepared, it’s a LOT! We had already cut up both onions and we didn’t want to waste any of them so we just kept making onion rings until they were all cooked.. There were so many onions I didn’t know what to do with myself! They reheat in the oven really well it turns out, which is a good thing because I hate wasting food!

Beer battered anything is delicious, that has been established the world over. But this recipe for Beer Battered Zucchini takes it to a whole new level! Next time I think I want to try doing rounds instead of spears, it will be  more time consuming to cook but I think it would be great to serve at a party! Can you imagine bringing this in the door? No boring ol’ onion dip at my parties!
The Zucchini kept some of it’s natural crunch and the beer batter absorbed some of the flavor of the Zucchini, it was amazing!

I love these simple chicken strips! It’s true, fried foods are always a good choice, and there’s nothing better than a good chicken strip when you’re looking for comfort food!

These chicken strips were amazing! Chicken is my favorite protein, and fried is always my favorite way to eat anything! So here you go, our go-to recipe for homemade chicken strips! When my siblings and I were younger we didn’t get a lot of food like this, cooking for six kids each with their own food quirks couldn’t have been very easy, and so we ate a lot of pasta and way more rice than I will ever eat again. Anyway, my parents always let us pick a special dinner for our birthdays and chicken strips were always my choice! Now that I’m an adult and I’m married (the Hubby has to fry things, I’m too much of a kitchen disaster) I can eat them whenever I want! Which probably isn’t good for me, but they sure taste amazing!

Ingredients
  • 2 lb chicken breasts
  • 3 large Eggs
  • 1 cup All-purpose flour
  • 2 cup panko bread crumbs
  • 1 clove garlic minced
  • 1/2 tsp cayenne
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • vegetable oil for frying
Servings: -8

  1. Preheat oil to 350 degrees F.
  2. Cut the chicken breasts into long strips and set aside.
  3. Beat the 3 eggs in a separate bowl and measure the flour into another separate dish.
  4. Put the panko into a pie plate or shallow bowl and season with garlic powder, cayenne, salt and pepper.
  5. Dip the chicken strips into the flour, the beaten egg and then dredge them into the seasoned panko.
  6. Fry in the hot peanut oil for 6 to 8 minutes, until golden brown, and remove to a paper towel lined sheet tray
  7. Enjoy!

Jalapeno Cream Cheese Chicken Wontons

So while we were shopping we stumbled across a new staple food. Jalapeno cream cheese. This stuff is amazing, and we like to put it in our meals, it may not be the healthiest way to eat but it sure is delicious. We decided to throw in some chicken and fry them up as Jalapeno Cream Cheese Chicken Wontons!

This was the second batch of wontons I’ve ever made, and as you can see I got the frying down a bit better than the first batch (less dark bits!) I swear they aren’t burned, though my wife doesn’t seem to think I’m very funny.

This before picture is what the Jalapeno Cream Cheese Chicken Wontons looked like laid out before frying them, and they already look delicious. I placed the wontons down in the pan just like this, so the wonton wont want to expand and spill the insides into the hot oil. The first time I tried making these that may have happened a few times and its just a waste of oil if they do expand on you.

  • 1 cab green chilies 4 oz can
  • 8 oz jalapeno cream cheese softened
  • 1 tsp pepper
  • 1 package wontons

  1. Mix the chicken, cream cheese, green chilies, and pepper together in a bowl
  2. Spoon 2-3 tbsp of the chicken mixture into each wonton and wrap up like a burrito
  3. Heat up a pan with some oil and fry each wonton until deep golden brown
  4. Lay on a paper towel to remove some of the oil
  5. Enjoy!

Chive and Onion Cream Cheese Chicken Wontons

Chive and Onion Cream Cheese Chicken Wontons|This Is Why I’m Full

Fried and creamy delicious tube rolls. At least that’s what I think they are, but my wife thinks these are called Chive and Onion Cream Cheese Chicken Wontons. I like my name better as its much easier to say and is even more descriptive than her recipe name. She made them so, she named them. As you can see my contribution was frying them, and I may have been distracted on a few of them, so just ignore those darker than average marks (its not burned!!)
The hardest part of this recipe is pan frying them. I wouldn’t trust them in a deep fryer so that’s why we (I) did it in a pan. Make sure you put the seam down when you put it in the oil or they will open up and the insides will spill everywhere. If that happens you’ll just have a big mess on your hands and you’ll have to start over with fresh oil.

Ingredients
  • 3 large chicken breasts cooked and shredded
  • 8 oz Chive and Onion cream cheese softened
  • 1 tsp pepper
  • 1 package wontons
Servings: -8

Instructions
  1. Mix the chicken, cream cheese, and pepper together in a bowl
  2. Spoon 2-3 tbsp of the chicken mixture into each wonton and wrap up like a burrito
  3. Heat up a pan with some oil and fry each wonton until deep golden brown
  4. Lay on a paper towel to remove some of the oil
  5. Enjoy!
