Ingredients
  • 1 tbsp bacon drippings
  • 2 cup cornmeal yellow, white if you have it
  • 2 tsp Baking soda
  • 1 tsp Salt
  • 1 tbsp Sugar white
  • 1 whole egg
  • 1 1/4 cup buttermilk
  • 6 tbsp Butter salted

Instructions
  1. Preheat your cast iron skillet with bacon drippings in the oven at 400* F. If you don't have a cast iron skillet you can also use a dutch oven or metal cake pan.
  2. While your cast iron heats up, make the batter. Whisk together all dry ingredients and wet ingredients in separate bowls. Melt your 6 tbsp of butter, then add the wet and dry ingredients together.
  3. When your pan and oven are hot, grab it and add your batter to the pan. Spread the batter evenly over the surface
  4. Bake the corn bread for about 20 minutes or until the edges and top start to brown.
  5. Rest your bread in your cast iron and serve warm!
Recipe Notes

Don't have buttermilk? For each cup of buttermilk, you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir the ingredients together and let rest for 5 minutes.

  • 1/8 cup olive oil
  • 1/4 cup Sriracha Chili sauce
  • 1/4 cup Parmesan cheese
  • 1 tbsp pepper

  1. Preheat oven to 375 degrees and grease your oven-safe pan of choice
  2. Take all of your ingredients except your oil and sriracha and combine them in a large bowl
  3. Put them into your greased pan
  4. Evenly pour your olive oil and sriracha over the top of the seasoned potatoes
  5. Bake at 375 for 35-40 minutes or until your potatoes are tender and slightly crispy on the edges

Fried Mashed Potato Balls

Are you ready for the best potato dish we have ever made? I certainly didn’t think that they would turn out this delicious, but they definitely did!

I love potatoes, I mean, I really do… They are my favorite food, I was a vegetarian for roughly three years, and I basically just ate potatoes. My dad used to call me a potato-arian, and it definitely fit!

I mean, look at these! How can you not want to just eat them right through your screen?!

I think that when the Hubby and I make them again we will add some cheese to the middle of the balls to give them a little bit of extra flavor! (Maybe we will even add some bacon, take them up another notch!)

Ingredients
  • 2 cups leftover mashed potatoes cold
  • 1 egg beaten
  • 1 cup Italian breadcrumbs
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1 egg beaten with 1 tbsp water
  • Oil for frying

  1. Mix your cold mashed potatoes with your garlic salt, pepper and one beaten egg
  2. Roll into ping-pong sized balls
  3. Place onto a cookie sheet and keep in the fridge until ready to fry
  4. Heat your oil to 425 degrees
  5. When ready to fry pull your mashed potatoes back out of the fridge and drop them one at a time into first the egg and water mixture and then into the breadcrumbs
  6. Fry each one until golden brown, 3-4 minutes
  7. Serve with your favorite dipping sauce and enjoy!

The hubby and I go through phases when it comes to our cooking, sometimes we make really healthy recipes for weeks, and sometimes we eat cookies for dinner every night. Luckily for you we made this on one of our healthy kicks, and boy was this a good one!

We fell in love with grilling recently, which in an apartment can be tricky, but we decided to buy a small propane grill and it was a fantastic idea! We use it for everything! We have made this a couple of times, we even made it in the oven once when it was raining and we couldn’t grill, it was delicious!

The best thing about this dish is that you can use whatever different seasonings that you want! (I’ve read that pesto is fabulous on cauliflower!)

Ingredients
  • 1 inch head cauliflower cut into oneslices
  • 3 tablespoons melted butter
  • 2 cloves garlic minced
  • 1 tablespoon crushed red pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil

  1. Mix all of your ingredients, except your cauliflower, in a bowl
  2. Using a kitchen brush spread the resulting mix onto both sides of each cauliflower steak
  3. Grill over medium-high heat until the stalks are tender
  4. Cool for five minutes
  5. Enjoy as a side dish or as your main course!

You can put whatever toppings you like in them,  my personal favorite is ham and pineapple, which is apparently something that a lot of people (including my Hubby) really don’t like.   • 8 oz elbow macaroni
  • 1 cup light mayonnaise can use lowfat
  • 3 tbsp Low-fat milk
  • 2 tbsp vinegar
  • 1 tbsp mustard
  • 1 tsp Sugar

  • 1/4 tsp pepper
  • 1 cup Celery sliced thin
  • 1 cup green bell pepper can use red if you like, chopped

I love veggies, but it’s hard to find time to cook them sometimes, but with this Lemon Garlic Parmesan Asparagus I no longer have any excuse, this takes around 10-12 minutes to cook, and it’s so tasty I could eat it every day! Sometimes the Hubby has a hard time eating veggies, he isn’t the world’s biggest fan, but if I say the word Garlic he’s almost always down to eat a massive amount!
I like my Asparagus just the tiniest bit overcooked, I like it to be on the softer side, but the good news about this recipe is that you can cook it to whatever level of done-ness you like best!

These Homemade Jalapeno Black Beans are a very versatile thing to always have ready to eat, you can make a whole bunch and keep them in your freezer and just pull them out and defrost when you need a quick and easy side dish! The reason the recipe calls for so much stuff is that when we make them we make a lot. that way we don’t have to spend 45 minutes making them every time we want some!
The really cool part about this Homemade Jalapeno Black Beans recipe is that you don’t have to eat them just as a side dish, you can add a can of tomatoes and a pound of ground meat and boom you have homemade Chili! Or you can add a little more broth and some shredded chicken and you have spicy chicken soup. These beans are a staple in our little household, and we eat them all the time!
Another really great thing about these is that you can also make them in the crock pot! Just cook up the veggies and dump it all in the Crock Pot and walk away! This truly is a great recipe! Think of all the things you can make these beans into!

Ingredients
  • 6 can black beans 16 oz can, drained
  • 3 large jalapenos seed them if you don't like it too spicy
  • 1/2 whole green bell pepper
  • 1/2 red red bell pepper
  • 1/4 whole Yellow onion
  • 1/4 cup cilantro
  • 1 cup chicken broth you can use whatever broth you like best!
  • 2 clove garlic
  • 2 tbsp olive oil
  • salt to taste
  • pepper to taste

  1. Put your jalapenos, red bell pepper, green bell pepper, onion, garlic and cilantro into your food processor
  2. Process until they are finely minced and mixed together
  3. Put a large pot on the stove and turn up to high heat
  4. Add your olive oil and add the food processed items and cook until soft
  5. Add your drained beans to the pot and stir thoroughly
  6. Add broth and salt and pepper (we used a lot, but that's just us!)
  7. Turn heat down and simmer on low heat for at least 20 minutes
  8. Enjoy!

SUMMER IS COMING! Okay, not really, but it is January, and that means Spring is almost here, and with warmer temperatures on the way it’s almost time to bring out one of my favorite side dishes, this amazing Cucumber Tomato and Onion Salad.  This delicious salad is crunchy and fresh, and goes well with almost any summer meal you can think of.
It takes hardly any time to make, and very few ingredients and you have a wonderful and healthy side dish. We made ours with plain yogurt, I wanted to use sour cream, but we happened to be making a lot of smoothies when we made this salad, so we had plain yogurt on hand and so we used that!
We actually made this three weeks in a row, and ate it with almost every dinner! It is a light and easy thing to make, it pairs well with any protein, hamburgers, hot dogs, fried chicken, anything you can think of!

  • 1/2 cup sour cream or plain yogurt
  • 1 large cucumber
  • 1 medium tomato
  • 1/2 medium Red Onion
  • 2-4 tsp Lemon juice
  • 1/2 - 3/4 tsp dill
  • Pinch of salt

  1. Peel and slice your cucumber, slice your tomato, and chop your onion.
  2. I like to slice, then quarter the onion because its easier to eat.
  3. In a bowl, combine dill and salt.
  4. Add sour cream or yogurt and lemon juice to taste. Mix well.
  5. Add onion, cucumber, and tomato to the mixture and stir until the veggies are coated with the dressing.
  6. Let sit for 30 minutes so that the flavors can meld

I know, I know, you are probably a bacon-hater, most people are nowadays, but I can’t bring myself to hate it! It has been said by some “health experts” that you take a certain amount of time off your life every time you eat bacon… All I have to say to those experts is what is life without bacon? Just kidding, I really do love bacon though. If you really want to do this in a “healthy” way I suppose you could substitute in some turkey “bacon” and use a whole wheat tortilla or something like that. But let’s be real here, you aren’t on thisiswhyimfull.com for a  turkey bacon wrap. You want the real deal!
Like I say in the recipe below, we have been known to add our Sriracha ranch to said food… Which really just means that we eat it on everything! My stomach doesn’t usually do well when milk is involved so we make ranch dressing from the packets, but instead of milk we use water! Then just add as much hot sauce as you like and enjoy!

  • 3 large burrito tortillas
  • 12 slice bacon cooked in strips
  • 1 can sliced black olives 4 oz can
  • 3 slice Pepperjack cheese
  • 1 whole tomato thinly sliced
  • 1 small Red Onion cut into slices
  • 3 tbsp Pico de Gallo salsa
  • romaine lettuce to taste

  1. Spread Pico de Gallo all over the center of the tortilla.
  2. Top with bacon, olives, lettuce, cheese, onion, and tomatoes. Fold the sides in, and then roll up.
  3. Repeat two more times and now you have three wraps!
  4. We also (from time to time) have been known to add our Sriracha ranch to these wraps. Yum!
  5. Enjoy!
