  • 1 1/4 cup buttermilk
  • 6 tbsp Butter salted
Servings: people

Recipe Notes

Don't have buttermilk? For each cup of buttermilk, you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir the ingredients together and let rest for 5 minutes.

Homemade Jalapeno Black Beans

Jalapeno Black Beans

Homemade Jalapeno Black Beans | This Is Why I’m Full

These Homemade Jalapeno Black Beans are a very versatile thing to always have ready to eat, you can make a whole bunch and keep them in your freezer and just pull them out and defrost when you need a quick and easy side dish! The reason the recipe calls for so much stuff is that when we make them we make a lot. that way we don’t have to spend 45 minutes making them every time we want some!
The really cool part about this Homemade Jalapeno Black Beans recipe is that you don’t have to eat them just as a side dish, you can add a can of tomatoes and a pound of ground meat and boom you have homemade Chili! Or you can add a little more broth and some shredded chicken and you have spicy chicken soup. These beans are a staple in our little household, and we eat them all the time!
Another really great thing about these is that you can also make them in the crock pot! Just cook up the veggies and dump it all in the Crock Pot and walk away! This truly is a great recipe! Think of all the things you can make these beans into!

Crock Pot Bear Chili

April 17, 2015 By admin@thisiswhyimfull.com Leave a Comment

So last year I happened to get a bear while hunting. We froze a ton of the meat in steaks, and decided this would be a great time to have some unique chili recipe! This chili came out pretty thick, which Taylor and I like about our chili. Our recipe for Crock Pot Bear Chili recipe was a bit spicy because we used Jalapeno black beans along with red beans. We also top our chili off with a fresh ground pepper when we go to serve it. We coupled this chili with our Homemade Cornbread recipe to soak up all the juicy bits at the end of the bowl.  So if you’re looking for a new spin on a classic chili, and can find bear or have some from your own hunt then give this a try. People don’t expect it when you tell them it’s bear they’re eating.

Spicy Chicken and Red Bean Soup

Spicy Chicken and Red Bean Soup|This Is Why I’m Full

I don’t know if you’ve noticed but there is something the Hubby and I make a lot. Soup. Do you want to know a why? It’s because we are in our twenties and don’t make nearly enough money! So what’s the easiest thing to make on a budget? Soup. And the best way to make a soup is to look in your cupboard and grab a bunch of canned food, add some chicken broth/beef broth and some kind of protein.. That’s how this Spicy Chicken and Red Bean Soup came about! We always have at least one onion in the kitchen (usually 2) and I will never cook without Garlic. So this was the equivalent of Kitchen Sink Cookies, but Kitchen Sink Soup!
It turned out pretty fantastic, I think when I make this next (on purpose of course) I will make sure that I just happen to have a fresh jalapeno in the apartment, I think some spice will make this even tastier!

Spicy Chicken Tomato Soup

Spicy Chicken Tomato Soup|This Is Why I’m Full

I like tomato soup, but it gets old. Eventually you have to grow up and realize that Campbell’s Tomato Soup isn’t really good for you in any way. It has no real protein and way too much sodium. You might as well just drink a V8, at least those have added vitamins. Anyway, this is my better alternative, my upgraded tomato soup: Spicy Chicken Tomato Soup.
When I first came up with this recipe I thought about using ground beef, but then I thought it would seem too much like a chili and I wanted to keep this as a soup, so I went with chicken.
This was a really good winter night meal, and it made for amazing leftovers for work lunches!

Crock Pot Spicy Salsa Chicken Pasta

Crock Pot Spicy Salsa Chicken Pasta|This Is Why I’m Full

This Crock Pot Spicy Salsa Chicken Pasta was amazing delicious because it’s something outside the norm. The hubby and I eat a lot of pasta with tomato sauce, a lot a lot. It’s kind of our favorite meal. So it was nice to have pasta, which we love, but a different kind. Something different was really nice! And the husband really liked it, he ate three helpings!
A shoutout goes out to whoever figured out that that you can cook pasta in a Crock Pot. I mean really, there are so many plus sides to cooking your pasta in the sauce of your dinner. It thickens itself, the pasta is flavorful on it’s own,  it takes a lot less maintenance so multitasking is a possibility. So I can wash up the dishes while the pasta cooks! I’m really glad that it works so well. It makes pasta, and already simple dish, even easier to make!

Red Beans and Rice

red beans and rice (2)

These Red Beans and Rice were one of hubby’s best dinner ideas. We have made it three or four times now and it tastes better every time!

Red Beans and Rice|This Is Why I’m Full

Truth be told, I’m not really a rice person at all. I have never been. It makes the hubby sad sometimes because he really likes rice and we don’t ever eat it. But when it comes to these Red Beans and Rice I will eat them all day, every day! So tasty! We made this after we went to Popeye’s for the first time and I discovered a love for red beans and rice.. And Dan said that we couldn’t eat there every night. (He’s no fun!) So I went on Pinterest and found a recipe that sounded delicious and easy. And it was! I really loved it, and it was better than Popeye’s because it was sooooo much cheaper. And there was a lot of leftovers so we had lunch for a week and a second dinner off of it, hooray!

Cheeseburger Soup

March 8, 2015 By admin@thisiswhyimfull.com Leave a Comment

#soup #cheeseburger

So like most young and newly married couples Dan and I live in an apartment. Boooooo. I can’t wait until we have enough money set aside to buy a house! One of the reasons I want a house is: apartment living prevents us from owning a grill. I want to make hamburgers every weekend in the summer. And I want to grill chicken instead of having to bake it. Want want want. Anyway, this is the closest I can get to cheeseburgers without making a huge mess in the apartment! (when we make burgers we make them in a pan on the stove and they get too thick and dry out. But anyway, this soup is really, really good! I can’t wait to make it again!

Crock Pot Chicken Tortilla Soup

Crock Pot Chicken Tortilla Soup|This Is Why I’m Full

Until I made this Crock Pot Chicken Tortilla Soup I had never actually had tortilla soup, and this was a really good choice! As always I took about three different recipes and put them all together into something that sounded amazing! After this sat in the Crock Pot all day our whole apartment smelled amazing! When we made it I decided to use the tomato halves and I still think that I made a fantastic choice. We strained all of the tomatoes out of the Crock Pot and put them into our food processor and added some flour to thicken it up and it was so good! We froze the half that we didn’t eat and ate it the next week and I wish that we had made more because it was fantastic! Please leave comments and suggestions below and enjoy!
