Rocks-a-rita | This Is Why I’m Full
I love summer, I love summer drinks, summer food, the smell of suncreen and salt water, but I especially love ice cold cocktails. And this Rocks-a-rita is a sure fire summer hit! Everyone loves margaritas, but sometimes it just feels like too much work to get together all of the ingredients for one, unless you are one of those people who have a constantly perfectly stocked bar (the Hubby and I usually don’t) So this Rocks-a-rita is a great choice for those times when you, well, don’t have time!
The most important thing to consider when making your very own Rocks-a-rita is the lime juice (and the tequila obviously, but everyone has their favorite tequila) You don’t want to go with a really over processed lime juice, it will make your drink taste really artificial, and the whole point of the Rocks-a-rita is to keep away from Margarita mix when you don’t happen to have Triple Sec. That’s why the Hubby and I usually go with Santa Cruz 100% Natural Lime Juice, it’s sweet, but not overly sugary and it goes great with any tequila!
I know making your own simple syrup can be kind of a chore, but once you make it you have it for weeks! (unless you can’t help yourself and you throw a party to show off your new cocktail brilliance!) If you really don’t want to take the time to make and cool your own simple syrup, try this one: Agave Nectar Sweetener. Agave is a great sugar replacement, and this syrup makes a great addition to any cocktail!
For an even more interesting drink you can use Key Lime juice instead of regular lime juice, Key Lime juice is a lot sweeter and more flavorful than normal lime juice, and if you, like me, are obsessed with making Key Lime Pie then you already have some laying around! (We use Nellie & Joe’s!)
