Ingredients
- 4 lbs chicken skinless
- 10 cup Water
- 1 whole Onion chopped
- 1/3 cup barley
- 1 can condensed chicken broth 10.5 oz
- 7 whole leeks sliced
- 2 whole stalks celery chopped
- 1 whole spring fresh thyme chopped
- 1 tbsp parsley chopped
- 1 tsp Salt
- 1/2 tsp pepper

Instructions
- In a large pot over high heat, combine the chicken, water, onion and barley
- Bring to a boil, reduce at to low and simmer for one hour
- Remove cooked chicken, and chop ino bite sized pieces
- Return to the pot
- Add the chicken broth, leeks, celery, thyme, parsley, salt, and pepper.
- Simmer for 30 minutes or until all vegetables are tender.
