Ingredients
  • 4 large potatoes chopped
  • 1/8 cup olive oil
  • 1/4 cup Sriracha Chili sauce
  • 1/4 cup Parmesan cheese
  • 1 tbsp pepper
  • 1 tbsp garlic salt

Instructions
  1. Preheat oven to 375 degrees and grease your oven-safe pan of choice
  2. Take all of your ingredients except your oil and sriracha and combine them in a large bowl
  3. Put them into your greased pan
  4. Evenly pour your olive oil and sriracha over the top of the seasoned potatoes
  5. Bake at 375 for 35-40 minutes or until your potatoes are tender and slightly crispy on the edges

What better way to bring our week of potato recipes than our Crock Pot Baked Potatoes? They are really easy to make and so low maintenance you won’t even need to think about them after you put them into the crock pot! We have made these quite a few times and they are delicious every time! We used them in almost every recipe that we have posted this week, amazing!
They are super versatile and let’s be honest, I will eat potatoes every day if I’m given the option!!

Ingredients
  • 6 large potatoes
  • 3 tbsp olive oil
  • Salt and Pepper
  • Parmesan cheese to taste
  • minced Garlic to taste

Instructions
  1. Start by scrubbing your potatoes well.
  2. Next make small slices into the potato or poke it several times with a fork- all the way around. This allows air to escape while the potato is cooking.
  3. Cut a square of foil large enough to cover each potato separately and completely.
  4. Place all potatoes into a large Tupperware bowl that has a lid and add your garlic, seasonings and olive oil place the lid on and shake thoroughly (it take a lot less time if you do it this way instead of doing it on every individually)
  5. Wrap each potato in it's own foil and place inside the Crock Pot.
  6. Cook on high heat for approximately 3 hours.

You won’t regret making these delicious and easy Homemade French Fries, they go well with any meal and who doesn’t love french fries?! These homemade french fries are much better for you than any fast food fries! The hubby and I make these every couple of weeks to go along with our chicken strips and usually some delicious cole slaw! (We will be posting those recipes very soon!)
Anyway, I am a huge fan of potatoes, as I’m sure you know if you have read any number of our posts! French fries are one of my favorite ways to eat potatoes! And we make them often!

  1. Heat your oil to 350 degrees in a pan or deep fryer
  2. Slice your potatoes lengthwise about 1/4" thick
  3. Cut each round into slices so you end up with long strips
  4. Fry a couple of handfuls at a time and set them aside
  5. Continue until all fries have gone through once
  6. NOW the fun part, fry them each a second time and set them aside
  7. When they have all been refried you can put them on a serving dish or platter you can season them with whatever you like!

These delicious Steak and Potato Tacos are sure to be a winner with every family member! Easy to make, and crazy delicious you will never want to make another taco recipe again! For me the most important part of these tacos was the potatoes, you can use frozen if you want to, hash browns or french fries will do the trick, but not for me!
I’m an over-achiever when it comes to potatoes, as you will see with my Twice Baked Potato Extravaganza! that I will be posting eventually. Anyway, for these tacos I planned to use store-bought frozen potatoes, but then I remembered the bag of potatoes sitting on the kitchen floor and I decided to make my own! In the past I have tried making fresh hash browns or home fries to go along with breakfast food, none of them worked out super well but for these Steak and Potato Tacos I decided to play it smart.
I both boiled and baked some potatoes, just to figure out what would work better, and I figured why not, I can just use the leftovers for another meal! Well, long story short the baked potatoes are what we ended up using for our Steak and Potato Tacos, they hold together much better and have that firm texture I was looking for!

Ingredients
  • 2 lb roast beef
  • 3 cup salsa
  • 2 cup Beef broth
  • 1 tbsp Taco seasoning
  • 1 whole lime juiced
  • 10-12 tortillas 9 inches
  • 1/2 lb potatoes russet or Idaho baked until cooked and chopped into large pieces
  • 1/2 cup cilantro
  • 1 clove garlic minced
  • 2 cups Parmesan cheese
Servings: -8

Instructions
  1. Put your roast into your crock pot with salsa, beef broth, lime juice, taco seasoning and cilantro
  2. Cook on low for 8 hours or on high for 6 hours
  3. Once the meat is cooked take it out and shred it
  4. Place your baked and chopped potatoes into a skillet on the stove with 2 tbsp olive oil and 1 clove Garlic cook on medium-high heat until golden brown, set aside
  5. Take each tortilla and butter one side of each, and press into a bowl of Parmesan cheese
  6. Cook each in a pan until the cheese turns golden brown
  7. Pleace a few fries/tots into the bottom of each taco shell
  8. Spoon 2-3 tbsp of the beef onto the top of the tots/fries
  9. Top with sour cream, cheese, guacamole, salsa, hot sauce, whatever you like!
  10. Enjoy!

So Big Bear… Most of my memories of summer camping trips with my family involve Big Bear. This is something my dad always makes, camping or as I got older on Sunday morning to help with the hangovers! My dad always makes it with sausage but the Hubby is a huge fan of bacon, have you noticed? Anyway, Bacon Big Bear is my way of bringing my husband into my childhood! (Spoiler alert, he loved it and you will too!)

  • 1/2 lb bacon cooked and chopped
  • 4 large potatoes boiled and grated
  • 4 large Eggs
  • 1 tbsp olive oil
  • 1/2 tsp pepper
  • Shredded Cheese

  1. I recommend boiling the potatoes the night before, they cook best when cold!
  2. So, cooked, cooled, and grated potatoes. Yay!
  3. Put your olive oil in a pan on medium high heat
  4. Add your potatoes and cook until they start to get crispy
  5. Stir in your chopped bacon and cook for a couple more minutes
  6. Whisk your eggs, and add them into the pot with your potatoes and bacon
  7. Add your pepper
  8. Cook until your eggs are done
  9. Serve in bowls with some yummy cheese on top
  10. Enjoy!

I’m a huge pot roast fan, there are so many things you can do with leftovers, it’s amazing! Pot roast is especially awesome for our little family because we love tacos, and in my opinion the best taco meat is shredded beef. We have made taquitos, chimichangas, quesadillas, etc from leftover pot roast! Plus the potatoes are a good way to stretch the meat into two leftover meals instead of just one! Plus Crock Pot make pot roast even easier to cook, don’t need to make a big mess in your roasting pan. Yeah. I’m a huge fan of pot roast and less mess..

Ingredients
  • 2 - 3 lbs chuck roast
  • 5 whole potatoes cut into chunks
  • 1 whole Onion cut into chunks
  • 4 whole Carrots optional
  • 2 cup beef Stock or broth
  • 2 cup Water
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt to taste
  • 1/4 tsp pepper to taste

Instructions
  1. First cut all of the potatoes and onions into large chunks.
  2. First add the Roast to the crock pot, then the potatoes and onions and carrots (if used).
  3. Then add the seasonings over top.
  4. Next add the beef stock. The roast should be covered in liquid so add water until it is covered.
  5. Cook on low for 8 hours or 6 hrs on high
  6. You will know it is done when you put a fork in it and it just falls apart.
  7. Once it is done remove the roast, potatoes, onions, and carrots from the crock pot and enjoy.
  8. You can use the juice over your roast or you can make a gravy by putting it on the stove and bringing to a boil while whisking in flour to the desired texture.

So like most young and newly married couples Dan and I live in an apartment. Boooooo. I can’t wait until we have enough money set aside to buy a house! One of the reasons I want a house is: apartment living prevents us from owning a grill. I want to make hamburgers every weekend in the summer. And I want to grill chicken instead of having to bake it. Want want want. Anyway, this is the closest I can get to cheeseburgers without making a huge mess in the apartment! (when we make burgers we make them in a pan on the stove and they get too thick and dry out. But anyway, this soup is really, really good! I can’t wait to make it again!

Panko Potatoes

Panko Potatoes combines the perfect combination of salty, soft and crunchy. Sliced potatoes are good on their own, but add some panko cheese and garlic and you’ve got some amazing potatoes. It puts sliced potatoes to shame with just a little seasoning. We have this recipe posted along with a dinner meal from last month, but after revisiting the recipe we decided to make the potatoes on their own with another meal, and figured we ought to post just the potatoes on their own. They are tasty enough to deserve their own post. If you haven’t tried to make potatoes with Panko I strongly suggest you try it out at least once, what have you got to lose besides a potato and some time? You might just find your new favorite dish!

This Cheesy Potato Casserole is an excellent side dish, or main course if you’re into potatoes. We made this as a side to our main course Honey Soy Sauce Chicken. Don’t forget to put a layer of foil down on your baking pan if you don’t there will be a stuck on mess to clean up after dinner. Foil is a much needed step when making this dish.

Ingredients
  • 3 lb potatoes peeled and thinly sliced
  • 3 cup Cheddar cheese
  • 2 cup Parmesan cheese
  • 3 tbsp olive oil
  • 2 tbsp minced Garlic
  • 2 tbsp Salt
  • 2 tbsp pepper

  1. Preheat oven to 400
  2. Line a loaf pan with foil and butter up (so nothing sticks!)
  3. In a Ziploc bag place potatoes and oil and shake until covered evenly
  4. In a medium bowl mix both cheeses, garlic, salt and pepper
  5. Set aside 1/2 cup of this mix, for topping
  6. Place a layer of oiled potatoes on bottom, and a thin layer of cheese
  7. Repeat until your pan is full or until you run out of potatoes and cheese!
  8. Sprinkle cheese that you set aside over top
  9. Bake until potatoes are all soft, top layer will get crispy and delicious, should take 30-40 minutes to cook all the way
  10. Remove from oven and let sit for 10 minutes before serving
  11. Enjoy!

  • 3 lb ground beef
  • 1 whole Onion chopped finely
  • 1 can potatoes diced, 32 oz
  • 1 can Carrots diced, 16 oz
  • 1/2 cup Beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Salt adjust to taste
  • 1/2 tsp pepper adjust to taste
  • 4 Pie crust
  • 4 large egg whites lightly beaten

  1. Preheat oven to 350 degrees
  2. In a large skillet, over medium heat, cook beef until evenly brown; drain excess grease
  3. Remove from heat and stir in onion, potatoes, carrots, beef broth, pepper, salt, and Worcestershire sauce.
  4. On a lightly floured surface, roll each pastry out to an 1/8" thickness and cut into 6" rounds.
  5. Place approx. 1/2 cup of the filling o one half of each round.
  6. Fold the pastry over the filling, and crimp edges to seal.
  7. Brush lightly with beaten egg white, and cut three small slits in the top of each to allow the steam to escape.
  8. Bake for 30-35 minutes, or until golden brown.
