  1. I recommend boiling the potatoes the night before, they cook best when cold!
  2. So, cooked, cooled, and grated potatoes. Yay!
  3. Put your olive oil in a pan on medium high heat
  4. Add your potatoes and cook until they start to get crispy
  5. Stir in your chopped bacon and cook for a couple more minutes
  6. Whisk your eggs, and add them into the pot with your potatoes and bacon
  7. Add your pepper
  8. Cook until your eggs are done
  9. Serve in bowls with some yummy cheese on top
  10. Enjoy!
