Instructions
  1. In a large skillet mix shredded meat with chile sauce, ketchup and chilies and salt to taste
  2. Cook for 5-10 minutes
  3. Cover and let stand while mixing dough
  4. In a large bowl cream lard/shortening for 2-3 minutes until smooth
  5. Alternately add flour and broth 1 cup at a time mixing until fluffy between each addition
  6. Add salt with the last cup of flour
  7. Rinse and separate Corn Husks into Small, Medium and Large piles
  8. Starting with large husks spread 2 tbsp dough in a 3×2″ rectangle 1″ above bottom edge
  9. Place 1 tbsp of filling along middle of dough
  10. Fold dough over filling and roll up husk around tamale
  11. Fold over narrow end wherever the dough starts
  12. Stand tamale open end up in steamer basket
  13. Repeat until filling and dough are gone
  14. Fill steamer to bottom of basket with hot water and steam tamales for 2 hours
  15. Check water level every 30-45 minutes and DO NOT LET WATER RUN OUT
