Stuffed peppers are one of my favorite foods. I love the way they look and taste, and let me say these are pretty dang good (thanks wife!) She made these for dinner one night and it was adorable watching her cut each individual pepper in half and remove the seeds. There was so much work going into one little bite sized pepper which we were making for a main course. When I told her I could eat about 20 more peppers than she had prepared her she just blankly stared at me and pointed to the kitchen.

I don’t mean to make this recipe sound hard, it actually isn’t. It is a little time consuming if you’re not a professional at preparing peppers, and I love my wife dearly but her with a sharp knife and small things takes awhile. So don’t let this scare you off from trying this recipe, you can use the filling just the same as you would if you got a large bell pepper and that’s a lot easier and less time consuming even if you don’t know what you’re doing with a knife.
