  1. Preheat oven to 375 degrees
  2. Cream butter in a stand mixer until smooth
  3. Add sugars to mixer and beat until light and fluffy
  4. Add eggs and vanilla and mix to combine
  5. Sift dry ingredients together and add them to mixer
  6. Mixing until dough comes together
  7. Add rolled oats and mix again
  8. Stir in butterscotch chips
  9. Scoop into 1″ balls and place 2″ apart on parchment papered cookie sheet
  10. Bake for 12-14 minutes and remove to cooling rack
  11. Makes 7 1/2 dozen
