Spicy Sausage Manicotti
uncooked, 8 ounces
Spicy Italian sausage
Preheat oven to 350 degrees
Cook pasta according to package directions (don’t overcook the pasta if you do they will go flat and crack in half!)
While the pasta cooks:
In a large skillet, cook the sausage and onion until browned and no longer pink.
Add garlic and continue to cook one minute longer.
Drain and remove from heat, set aside.
In large bowl, stir together the cream cheese, ricotta, salt and pepper.
Stir in the cooked meat.
With your fingers, fill the cooled pasta tubes with the beef mixture and arrange the filled pasta in your favorite baking dish.
Pour you sauce over the pasta.
Sprinkle with your mozzarella.
Cover with foil and bake for 20-25 minutes.
Uncover and bake an additional 5-10 minutes longer or until bubbly and heated through
