Shredded Beef Taquitos|This Is Why I’m Full
Leftover dinners are a great way to stretch your dollar a little further, everyone knows that. However there are only so many times you can eat the same meal in a week. Don’t get me wrong, I love roast, but sometimes you get bored! Which is how this recipe came about!
The Hubby and I have made a LOT of taquitos since we met, it’s one of our favorite meals. And they are so easy to put together and you can put so many different things into them and they always taste great! (Fried tortillas, how could they not) This however is the first time we have specifically made a roast for taquitos and I was really nervous! Usually we make a pot roast and then use the leftover meat to make them, but this was a whole different situation! I was worried that the roast would be too spicy. Or not spicy enough. Or that it wouldn’t cook right without that lovely bed of potatoes in the bottom of the pot protecting it from direct heat (I was also sad that there wouldn’t be any potatoes, Irish stereotype much…)
However I needn’t have worried, the roast came out perfectly! It shredded just right, and it didn’t get overcooked. It had just the right amount of spice and was just generally delicious! We also had enough leftovers to make two other dinners with it, hooray!
