Broccoli Cheese Patties|This Is Why I’m Full
The Hubby doesn’t really like vegetables (or as he calls them green stuff) and I do, so I have to find ways to get him to eat them because you need veggies in your diet! So one day I was scrolling through Pinterest and I found the recipe for these cheesy and delicious Broccoli Cheese Patties.
They were super easy to put together and the Hubby loved them! I made this as our main dish, however if you feel you need protein they would be delicious with steak, or any kind of chicken! I even thought about adding bacon to them but I try and avoid cooking bacon because I always burn myself!
I think next time I might also add some Parmesan cheese to make them even crispier! These were so good I ate them the whole week at work for lunch!

- 1 lb frozen chopped broccoli thawed and drained of liquid
- 1 1/2 cup Cheddar cheese grated
- 3 large Eggs
- salt & pepper
- 1 cup of seasoned Italian breadcrumbs (you may need more I ended up adding extra but 1 is a good place to start!)
- Mix all the ingredients together in a large bowl.
- With your hands, form small patties and lay on a parchment lined baking sheet.
- Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.
- Let cool and enjoy!
