This Pumpkin Chocolate Chip and Caramel Bars recipe was the Hubby’s brainchild, all I did was eat way too much of it!

Around Thanksgiving Hubby and I bought way too many cans of pumpkin.. (We are broke and they were on sale!) Anyway, we have been trying to find ways to use them ever since.. Pumpkin muffins, cookies, pie, tiny pies, etc. And we finally hit the last can, but we also hit the bottom of our recipe list.. And so the Hubby spent an hour or more looking for something that we hadn’t made, and he found something similar to this. But a lot more difficult, it involved making your own caramel and a bunch of candies and things we couldn’t find. So he tweaked it and made these amazing Pumpkin Chocolate Chip and Caramel Bars, and they were fantastic!

Ingredients
  • 2 1/2 cup Flour
  • 2 tsp Cinnamon
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 tsp Pumpkin pie spice
  • 1 cup Butter melted
  • 1 cup Brown sugar
  • 1/1 cup granulated sugar
  • 1 large egg lightly beaten
  • 1 tsp Vanilla
  • 1 can pumpkin puree 15 oz can
  • 3/4 cup semi-sweet chocolate chips
  • caramel sauce

Instructions
  1. Preheat the oven to 350°F.
  2. Line a 9x13-inch baking dish with parchment paper or spray with non-stick cooking spray.
  3. In a bowl, combine the flour, cinnamon, baking soda, salt, and Pumpkin Pie Spice.
  4. In another bowl, combine the butter, brown sugar and granulated sugar.
  5. Stir in the egg and vanilla, then add in the pumpkin.
  6. Add in the dry ingredients and stir just until combined.
  7. Fold in the chocolate chips.
  8. Bake for 30-40 minutes or until cooked through.
  9. Top with caramel.
  10. Enjoy!
