Oven Roasted Zucchini|This Is Why I’m Full
I still can’t believe how easy thisĀ Oven Roasted Zucchini was to make, and how fast the Hubby and I ate it! Sometimes it’s hard to get the Hubby to eat vegetables, he tends to avoid eating what he classifies simply as “green things” I however LOVE zucchini! I love a lot of veggies, but we don’t eat them all that often so I get really happy when he actually likes a side dish that I make!
I made this again a few days ago but I crusted it in a mix Parmesan cheese and Siracha and he really loved that one, I can’t wait to get that recipe up!

- 1 large Zucchini cut into spears
- olive oil
- Cheddar cheese
- Salt
- Black pepper
- Garlic Powder {optional}
- Heat oven to 375 degrees.
- Wash and slice zucchini into spears.
- Place zucchini spears into a large mixing bowl and drizzle with a little olive oil.
- Then place zucchini spears on a cookie sheet in a single layer.
- Sprinkle with salt, pepper, cheddar cheese, and if desired, a little garlic powder.
- Roast uncovered in oven for 10-15 minutes or until tender.
