Here’s another installment in our Crock Pot adventure! Crock Pot Enchilada PASTA! This might be another recipe I ate with chips.

Anyway, after the stares from my wife that I’m eating dinner wrong we got down to the meal. It is a great and easy pasta recipe. My wife went on a bit of an enchilada sauce kick so we made this too. It’s surprising how many Mexican and Italian dishes will blend together. I never would have thought that red enchilada sauce and pasta would go together, mainly because I’ve ever only had pasta with pasta sauce. But it works, so give it a try like I did and expand your horizons!

Ingredients
  • 1 lb ground beef
  • 1 whole Onion chopped
  • 1 cup Beef broth
  • 1 can red enchilada sauce 19 oz can
  • 2 tbsp taco seasonings
  • 1 clove garlic minced
  • 1 lb of your favorite pasta
Servings: -8

Instructions
  1. Combine the first 6 ingredients in your crock pot
  2. Cook on low for 4 hours
  3. Add your pasta and turn onto high
  4. Stir every few minutes until pasta is cooked through
  5. Turn off your crock pot, and serve (let it cool for a few minutes)
  6. Enjoy!
