Enchilada PASTA! This might be another recipe I ate with chips.
Anyway, after the stares from my wife that I’m eating dinner wrong we got down to the meal. It is a great and easy pasta recipe. My wife went on a bit of an enchilada sauce kick so we made this too. It’s surprising how many Mexican and Italian dishes will blend together. I never would have thought that red enchilada sauce and pasta would go together, mainly because I’ve ever only had pasta with pasta sauce. But it works, so give it a try like I did and expand your horizons!

- 1 lb ground beef
- 1 whole Onion chopped
- 1 cup Beef broth
- 1 can red enchilada sauce 19 oz can
- 2 tbsp taco seasonings
- 1 clove garlic minced
- 1 lb of your favorite pasta
- Combine the first 6 ingredients in your crock pot
- Cook on low for 4 hours
- Add your pasta and turn onto high
- Stir every few minutes until pasta is cooked through
- Turn off your crock pot, and serve (let it cool for a few minutes)
- Enjoy!
