Pumpkin Waffles With Maple Cream Cheese|This Is Why I’m Full
Pumpkin season. You know what that means, everyone wants to have pumpkin. Bread, waffles, muffins, pie. If it has pumpkin, then chances are everyone will want to eat it. It’s almost a guarantee that anyone who tries these Pumpkin Waffles With Maple Cream Cheese won’t want to eat a “regular” waffle again. It could be the pumpkin aspect, or it could be the maple cream cheese icing. Either way cream cheese is delicious, oh, and pumpkin waffles.
I’ve used this recipe as a wake up call for my finance many times during pumpkin season, and I swear she wont get out of bed faster for anything else. Not even coffee can wake her up as quickly as pumpkin waffles. Like me she loves bacon and I’ve figured out that if I make her enough waffles and THEN make the bacon she won’t have enough room for bacon. That’s a win-win in itself, happy fiance, and I get all of the bacon. Hopefully she won’t read this post as I’ve just outed myself for my greed of bacon.

- Beat together:
- 3 large Eggs
- 16 oz Pumpkin
- 3/4 cup Oil
- 1/2 cup Water
- 1/2 cup Plain yogurt
- Mix in:
- 2 1/2 cup All-purpose flour
- 1 2/3 cup Sugar
- 1 1/2 tsp Baking soda
- 1 1/4 tsp Salt
- 2 tsp Pumpkin pie spice
- Maple Cream Cheese:
- 1 8 oz Cream cheese package
- 1 cup Powdered sugar
- 1/4 cup Maple syrup
- 1/8 tsp Vanilla
- 1/8 tsp Cinnamon
- Blend the ingredients together and let sit for 30 minutes, then follow your normal waffle iron method.
- I don't have an exact recipe for the Maple Cream Cheese recipe, I just make a large batch of it every time I make these.
